BRUSCHETTA WITH TOMATOES & BASIL

Use fresh, firm tomatoes to ensure the best antioxidant content and prepare yourself for a rejuvenating lycopene hit.

Cooking time: 5 minutes

Serves 4

200 g (7 oz) cherry tomatoes, quartered

1 small red onion, thinly sliced

1 garlic clove, crushed

1 tbsp balsamic vinegar

3 tbsps olive oil

4 thick slices of brown sourdough bread

handful of basil leaves, torn

sea salt and black pepper

Place the tomatoes in a bowl with the onion, garlic, vinegar and half the olive oil. Season to taste, stir to combine and set aside.
